Corn and Spinach Pizza
Who says pizza can't be healthy?
One of my favourite Italian Pizza is Corn and Spinach with basil and mushrooms. It's simply delicious with amazing flavours and lots of healthy vegetables, multigrain pizza base, olive oil , protein rich cheese ,and mineral rich tomatoes too! Enjoy !
First, heat 2 tsp olive oil in a pan. Add chopped garlic, saute' well. Then saute' onions, tomatoes for 2 minutes.
Then add tomato puree, 1 tsp sugar, salt, 2 tablespoons water and cook the sauce till thick. Remove and keep ready at room temperature.
Preheat oven at 200°c for 10 minutes. Till then arrange the pizza base on a lined baking tray.
Heat a pan and add 1 tsp olive oil. Saute' the spinach and corn kernels for 2 minutes. Add mushrooms and mix well.
Season with salt pepper, Italian seasonings, Chilli flakes. Add cherry tomatoes and coat well
Spread the sauce on pizza base. Add the prepared vegetables on top and spread well.sprinkle cheese on top. Top with olives and basil leaves.
Bake for 10 minutes till the top is crusty and cheese melts.(If pizza base is fully cooked, grill it instead of baking.)
When done, take out, slice, add oregano, chilli flakes and serve with your favourite sauce. Enjoy delicious Cheesy corn and Spinach Pizza!
