How to Make It

1. Step

Wash the eggplant and trim the ends. Cut into 1/2" slices and place into a colander, sprinkle with salt and let sit for 30 minutes.

2. Step

Preheat the oven to 400°F.

3. Step

Meanwhile, melt the butter in a bowl and mix the breadcrumbs, spices and Parmesan cheese in a separate bowl.

4. Step

Dip each eggplant slice into the butter and then the breadcrumb mixture. Line a baking sheet with aluminum foil or parchment paper. Then place the slices on the baking sheet in a single layer.

5. Step

Bake in the preheated oven for 15 minutes, then flip each slice and bake for 7 more minutes. The eggplant should be golden brown and the breading crispy. Enjoy!
