French beans are a powerhouse of nutrients mainly proteins, calcium, iron, vitamin B, fiber and antioxidants. They are very important part of any vegetarian diet. This week, I have made French beans foogath which is a very quick and easy southern recipe and tastes yummy with rice or roti. It's a simple stir-fry of beans with spices and topped with fresh coconut. Enjoy!

How to Make It

1. Step

First, wash and dry the beans. Cut them in desired shape like squares or small cubes

2. Step

Then take an iron wok and add oil. When it heats up, add Mustard seeds, chana daal, urad daal, asafoetida and stir well. Then add curry leaves, red chillies, and mix well and cook for one minute.

3. Step

Now, add the beans and mix well. Cook them for 1 minute with cover. Sprinkle some hot water, rest of the spices and and stir well. Close lid let them cook for another minute.

4. Step

When they are half cooked, add salt, half the portion of coconut and mix well, Sprinkle some hot water again and let the beans cook with cover on for 2 minutes. Keep the flame medium.

5. Step

Then switch off flame when beans are almost done and let them rest for 5 minutes with lid on. Then add lemon juice and mix well. Then serve garnished with more coconut along with rice or roti. Enjoy!


Ingredients

  • 250 gms French beans
  • 1/4 cup Fresh or dry grated coconut
  • 3 Red chillies
  • 10 Curry leaves
  • 1 tsp Split urad dal
  • 1 tsp Split chana dal
  • 1 tsp Mustard seeds
  • 1/2 tsp Asafoetida
  • 1 tsp Turmeric powder
  • 1 tsp Chilli powder
  • 1 tsp Cumin powder(optional)
  • 1 tsp Coriander powder(optional)
  • to taste Salt
  • 2 tsp Cooking oil
  • 1 tsp Lemon juice
  • 2-3 tablespoons Hot water
