Healthy Leftover Idea: Steak Potato Cheese Sandwich

Here’s an easy way to have a great-tasting steak meal that would normally cost $30 or more per plate at a restaurant but you’ll pay nowhere near that amount. For this meal, aside from the condiments that were already on hand, the food items only cost about $20 total which broke down as steaks ($16), mixed vegetables ($1.50) and potatoes ($3). Since 6 portions made, that means each serving cost barely over $3! How can you beat that? Plus, if you want a handheld treat to take with you to work the following day, the leftover meal idea only needs sandwich rolls and some reduced fat shredded cheese to create delightful steak potato cheese sandwiches.

Prep Time
– 10 minutes

Cooking Time
– 60 minutes

(4-6 servings)
– 2-3 pounds steak of your preference
– 1 bag of frozen mixed vegetables
– 1 baked potato per person (remember extra for leftovers)
– A1 sauce
– Worcestershire sauce
– BBQ sauce
– seasonings: garlic powder, cayenne pepper, salt, and pepper
– olive oil
– fresh chives and butter for potatoes (or other garnishes you prefer)

For Steak Potato Cheese Sandwich
– sandwich roll(s)
– reduced fat shredded cheese

*If at all possible, marinate the steak for a minimum of 30 minutes but a few hours or even overnight is more preferred to allow marinate the opportunity to soak into the steak.

1. To marinate, place steaks in a large mixing bowl and add 5 tablespoons Worcestershire and BBQ sauce, 1/4 cup A1 sauce, a tablespoon of minced onion, a teaspoon of each cayenne pepper, garlic powder, pepper, and salt. Use forks to repeatedly puncture steaks on both sides and mix ingredients well. When finished cover bowl with plastic wrap or foil and place in the refrigerator for 30 minutes up to overnight if you can.

2. For the baked potatoes, preheat oven to 425 degrees. While oven is warming up, wash potatoes in cold water, lightly cover with olive oil, sprinkle salt all over. * DON’T FORGET to puncture each potato with a fork a number of times to relieve steam so that they do not explode in the oven while cooking. If you like a softer skin, wrap in foil and place on oven rack. If you want a crispier skin you can place the potato directly on the oven rack. Set timer for 1 hour.

3. When you are ready to cook the steaks, we used a stove and pan but if you prefer to use a bbq grill that’s up to you. Place pan on stove medium temperature and place steaks side by side. Allow to cook on each side for about four minutes then flip using either a fork or tongs. Cook for about 20 minutes or until desired wellness is reached. You can always use a meat thermometer and/or carefully slice open the middle of one steak to check the color and see if it is to your liking.

steak baked potato and veggies4. Once you get the steaks cooking you can start boiling the water for the mixed vegetables. When water is boiling add a few dashes of seasoned salt and then the entire bag of mixed veggies. Stir occasionally cooking for 10-12 minutes. When finished use a colander to strain all the water out.

5. Finally, prepare the garnishes you want to use for your bake potatoes. In this meal we used freshly cut chives and a bit of butter. Slice open each potato lengthwise and use a fork to scrap the potato inwards from the skin. Add garnishes and mix well with a fork.

healthy leftover idea6. Serve an appropriate portion size and enjoy. Keep in mind if the steaks you purchased are rather large-sized (like the ones in this example) there’s nothing wrong with cutting them in half to create a whole separate portion or leftovers for later.

Healthy Leftover Idea: Steak Potato Cheese Sandwich

Instead of taking this exact same meal in a plastic travel container to work the next day, you can elect to make these delicious portable steak potato cheese sandwiches. The only extra items you’ll need are sandwich rolls (check your supermarket’s bakery section for fresh options) and some reduced fat shredded cheese.

In this example, the roll was sliced open and some of the bread from the inside was scooped out to provide enough room for all the ingredients to fit. Dice up a chunk of steak into tiny pieces and then mix with some potato removed from the skin. If you’d like, spread a tablespoon of A1 sauce on the inside of the roll, then add a small layer of cheese, the steak and potato mixture, and top with a bit more cheese. When you’re ready to eat, microwave for 20-30 seconds and you’ll have a delicious steak potato cheese sandwich for lunch. Tie that in with a large bottle or glass of water and you’ll have a great-tasting lunch under 450 calories.
